Prior to joining Zannier Hotels, Julien worked at Pierre Gagnaire, a two Michelin star restaurant in Paris and Villa Florentine, a Relais & Châteaux hotel, in Lyon. Julien also previously worked at Bernard Pacaud’s l’Ambroisie, a three Michelin star restaurant in Paris.
“Each dish at Phum Baitang is adapted according to whichever fresh ingredients are available during the season, and the result is always perfectly harmonious,” shared Julien.
The team of gardeners provides the utmost care to the plants, trees, and rice paddies at Phum Baitang. All vegetables and herbs are grown ethically and responsibly.
Some vegetables in the garden include bitter gourd which is low in calories but high in dietary fiber, minerals, vitamins and anti-oxidants therefore pairing beautifully with Asian inspired dishes. Okras are grown using the Resort’s own made compost, free of pesticides and herbicides, it is a delicious addition for soups, curries and stir fry dishes.
“Nature plays an important role for each restaurant, depending on how much rainfall and sunshine we get, the produce grown varies from season to season. Instead of following the latest food trends, I always go with my instincts, which plays well with our founder Arnaud’s philosophy, simplicity is the ultimate sophistication,” commented Julien.
Bay Phsar, also known as Rice Market in Khmer, features not only locally inspired flavours, but a Cambodian street market setting where guests will have the opportunity to pick and choose their own fresh produce, herbs and spices from the garden for chef to prepare with their meal. The rice accompanying the cuisine comes straight from the paddy fields. Some of the signature dishes are green papaya salad with shrimp, sweet chili sauce garnished with peanuts and crushed basil, also the Bangkia Bampong – crispy battered shrimp with lime black pepper dipping sauce.
Offering fusion and international cuisine, Hang Bay features the freshest seafood, finest steaks and vegetables from Phum Baitang’s own garden. Popular dishes include Indonesian beef rending cooked in mild spices and coconut cream, sea bass fillet baked in salt, kampot pepper and kaffir lime crust.
Cigar and Cocktail Lounge
Housed in a 100 year-old farm house, the Cigar and Cocktail Lounge is furnished with rattan wing chairs, pie crust tables and oriental carpets. Guests can choose from an extensive drink menu with a wide range of cocktails, fine wines, vintage spirits and liqueurs as well as to enjoy premium cigars on the terrace.
Adjacent to the award winning 50m outdoor infinity pool, the Pool Bar provides a breezy spot for guests to enjoy light meals and refreshing homemade juices while lazing under the tropical sun.
Cooking classes at Phum Baitang are a unique opportunity for guests interested in authentic Cambodian cuisine. The chef on site takes guests on a tour to the organic garden to select homegrown vegetables and herbs as part of the culinary preparation.
