03 Jan An Authentic Cambodian Gastronomic Journey Begins at Zannier Hotels’ Phum Baitang in Siem Reap

Set in an idyllic position and surrounded by swaying lemongrass plantations and rice paddies, Phum Baitang by Zannier Hotels offers one of the most authentic Cambodian dining experiences in Siem Reap.

Featuring four restaurants and bars including Bay Phsar, Hang Bay, the Cigar & Cocktail Lounge and Pool Bar, guests can escape to Phum Baitang’s lush and tranquil green village setting to indulge in delicious gastronomic delights. Overlooking the garden and rice paddies, the Cigar & Cocktail Lounge and Pool Bar offer enviable views for lounging at sunset and unwinding during an evening under the stars.

Julien Burlat, heads Food & Beverage for Zannier Hotels.  All dishes are made from local ingredients, and purchased from the best producers to support the local community and Khmer culture. Guests are taken on a culinary discovery that is authentic and humble.

Prior to joining Zannier Hotels, Julien worked at Pierre Gagnaire, a two Michelin star restaurant in Paris and Villa Florentine, a Relais & Châteaux hotel, in Lyon. Julien also previously worked at Bernard Pacaud’s l’Ambroisie, a three Michelin star restaurant in Paris.

“Each dish at Phum Baitang is adapted according to whichever fresh ingredients are available during the season, and the result is always perfectly harmonious,” shared Julien.

Fried Pork Sping Rolls

The team of gardeners provides the utmost care to the plants, trees, and rice paddies at Phum Baitang. All vegetables and herbs are grown ethically and responsibly.

Some vegetables in the garden include bitter gourd which is low in calories but high in dietary fiber, minerals, vitamins and anti-oxidants therefore pairing beautifully with Asian inspired dishes. Okras are grown using the Resort’s own made compost, free of pesticides and herbicides, it is a delicious addition for soups, curries and stir fry dishes.

“Nature plays an important role for each restaurant, depending on how much rainfall and sunshine we get, the produce grown varies from season to season. Instead of following the latest food trends, I always go with my instincts, which plays well with our founder Arnaud’s philosophy, simplicity is the ultimate sophistication,” commented Julien.
